What is Regenerative Flour?

Great bread begins long before the grain reaches the mill.

It begins in healthy soil, on farms where farmers work with nature rather than against it. Where crops are grown as part of a living system, biodiversity is encouraged, and the soil is treated as something to build, not simply something to extract from.

That is the foundation of regenerative flour.

At Mill Republic, we work directly with Dutch farmers who are changing the way grain is grown and we bring their harvests from the field to the bakery through local, transparent milling.

Regenerative agriculture starts with the soil

Regenerative farming is about restoring and strengthening the natural systems that make agriculture possible.

Instead of relying on a simple cycle of planting, harvesting and replacing what is lost, regenerative farmers focus on building healthier soil over time.

Depending on the farm and the landscape, this can mean:

  • Growing cover crops to keep living roots in the soil
  • Rotating different crops to support soil health
  • Reducing soil disturbance
  • Increasing biodiversity
  • Using fewer synthetic inputs
  • Integrating crops and livestock
  • Keeping the soil covered and protected
  • Building organic matter and improving the soil’s ability to hold water

There is no single recipe for regenerative agriculture.

Every farm is different.

And that is exactly why we believe the farmer should be at the heart of the story.

Why does regenerative farming matter?

Healthy soil is alive.

It contains fungi, bacteria, insects, roots and countless other organisms that work together to create a functioning ecosystem. When soil is healthy, it can support crops, retain water, cycle nutrients and become more resilient to drought, heavy rainfall and other pressures.

Regenerative farming aims to strengthen these natural processes.

It is not about promising that one farming practice will solve everything.

It is about building resilience over time.

And when you choose regenerative flour, you help create a market for farmers who are investing in that future.

  • Local

Our grains are grown by Dutch farmers and processed through regional milling infrastructure. Keeping the chain closer to home means creating stronger connections between farmers, millers and bakers.

  • Traceable

We want to know where our grain comes from.

    Not just the country.
    Not just the region.

The farm. The farmer. The harvest.

  • Carefully milled for Bakers

We stone-mill our grains with a focus on preserving the character and flavour of the grain.

Because good flour shouldn't need to hide where it came from.
